Kochere Coffee Company is shipping a new coffee this month in its Safari "Coffee of the Month" Club: a honey-processed microlot from La Paz, Honduras.

Every month, Safari Club subscribers receive a different single-origin coffee, roasted to order and shipped within one to two days so it arrives close to peak freshness instead of sitting in a warehouse. This lot comes from Finca Liquidambar, a farm run by Roberto Rene Gonzalez in Guascotoro, San Jose, La Paz. The farm sits at about 1,510 meters above sea level, in clay-mineral soil, and grows three varietals: Bourbon, Catuai, and Pacas. Pacas is native to Honduras, first identified there in the 1930s as a natural mutation of Bourbon, giving this lot a bit of local coffee history along with its flavor.

The coffee is processed using the honey method. Cherries are pulped, then dried with some of the fruit's mucilage still on the parchment, inside solar dryers that keep rain off the beans while still allowing a slow, controlled dry. Honey processing lands between washed and natural processing -- more sweetness and body than a washed coffee, more clarity than a natural.

The result is Organic certified, scored 80-plus by Q Graders, and roasted medium, with cupping notes of brown sugar, nectarine, peach, and toasted coconut.

Kochere was founded in 2022 by a team with virtually no formal experience in specialty coffee, built instead around direct relationships with smallholder farms and cooperatives and coffee roasted to order rather than pulled from a warehouse shelf. The Safari Club grew out of that same approach: rather than settle on one blend, it ships subscribers a new origin every month.

According to Kochere's founding team, staying connected with subscribers means more than shipping coffee on a schedule -- it means sharing the stories behind each origin, the farmers who grow it, and the process that shapes its flavor before the coffee arrives.
